Watermelon Margarita

Even though it’s mid September, it’s still almost 90 degrees outside and based on how this year has been going, I’m just going to assume this will be the never ending summer of HEAT! Our last night in North Carolina we decided to ditch the red wine and try some cocktails. This summer I found a new love for watermelon margaritas and they taste just as good in the mountains as they do by the beach.

I casually followed THIS RECIPE for the margaritas, but since I don’t follow recipes well I put my own spin on it. The key to the sweetness was making a simple syrup with sprigs of fresh mint in the pot (equal parts sugar, water and some mint. Bring to a boil to dissolve the sugar then add it to your cocktail.) I’ve always been intimidated by making simple syrup but it is SO SIMPLE. Literally. You can’t mess up. A blender makes muddling the watermelon much easier and I always just eye ball my tequila. Also to make it less strong you can add a splash of LaCroix or Topo Chico, some type of sparkling water with hint of lime.

Aperol Spritz

Another favorite is an Aperol Spritz, garnished with a slice of orange is perfect for a hot day. Here is the recipe. Equal parts Aperol & Prosecco and some soda water. I drank too many of these in Italy and I love that you can do different spins on spritz’s with different alcohols, I’ll be trying this grapefruit white wine spritz next!
